Der korfiotische Brauch der “Tiganites”

Jedes Jahr am 12.12. feiern wir auf Korfu unseren Schutzheiligen, den Heiligen Spyridon. Dieser Tag ist großartig für Korfu, da jedes Haus feiert. Als Brauch braten wir `Tiganites` (auf korfiotisch) ab dem Vorabend, in jedem Haushalt, in jeder Nachbarschaft. Der Teig besteht aus Wasser, Mehl und Hefe und wird über Nacht gehen gelassen. Zum Servieren können Sie wählen, was Sie bevorzugen: Honig und Zimt, Puderzucker oder Schokolade.

Wie macht man Tiaganites?

Die perfekten traditionellen Tiganites (korfiotische Donuts) sind außen knusprig und golden und innen fluffig und luftig. Um die perfekte Textur für Ihre Tiganite zu erreichen, geben Sie dem Teig Zeit zum Aufgehen und er wird Sie mit seiner unverwechselbaren luftigen Lockerheit belohnen. Bei der Zubereitung dieses Tiganite-Rezepts ist es wichtig, die richtige Temperatur zu verwenden. Lösen Sie die Hefe immer in lauwarmem Wasser auf und lassen Sie den Teig in warmer Umgebung aufgehen. Frittieren Sie die Tiganites in heißem Öl. Achten Sie darauf, sie in Portionen zu braten, damit die Tiganite wahrscheinlich zusammenkleben und die Temperatur des Öls sinkt.

Alle Zutaten für die Donuts außer dem Öl in eine Schüssel geben. Mit einem Schneebesen rühren, bis ein Brei entsteht. Stellen Sie sicher, dass das Wasser nicht heiß ist, sondern Raumtemperatur hat.

Die Schüssel mit einer Folie abdecken und in einer warmen und trockenen Umgebung 30-45 Minuten gehen lassen.

• 280ml Wasser

• 9gr Trockenhefe

• 1 Prise Salz

• 200gr Mehl

• 50gr Maismehl

• Sonnenblumenöl (zum Braten)
